If/when a company picks up the game and decides to continue it, will V-Sets remain DCI-legal? Or for sanctioned play legal?

I would certainly hope so. The V-sets have been great. If the game does get picked up in the same format, though, I bet you'd see power creep become power leap. On the one hand, they might want to keep the old players in the fold. On the other hand, they want to get new players who aren't at a great disadvantage to the old hats - and they want to make sure the old players have incentive to buy the new pieces.
I'm still doubtful that the game continues, though.

Interesting thought. Unless said company did a better job with making stats and supporting the tournament scene than the player-run organization, I don't think things would revert back to the "old way".
